On the frame (not shown) of the device, there is an endless envelope feed tape 1, a guide roller 2, and a skinning roller 3, which are rotated in the same direction, on the feed side. The skinning roller 3 has teeth on its side surface 4 formed by longitudinal grooves 5. A pressure shoe 6 with a pressure surface 7 is installed opposite the side surface 4 of the skin cleaning roller 3 in the area of its converging side, the radius of curvature of which mainly corresponds to the radius of curvature side surface 4 of the skinning roller 3. Each guide element 20 in the part that projects into the guide groove 15, on the sides facing the swing direction, is provided with a chamfer 24 of at least the thickness of the knife wedge 16. The device works as follows
The skinned fillet, laid with the side containing the skin and also the tail part forward, with the help of the feeding tape 1 falls onto the side surface 4 of the rotating skinning roller 3 and is transported from the latter further. To ensure a more rational use of the blade of the knife 16, the latter can be made in the form of a surface blade, provided that both longitudinal sides are provided with a cutting edge. In order to rotate or replace the blade of the knife 16, it is necessary to loosen the connection between the slip and the crosshead 25, after which the blade of the knife 16 can be pulled out by displacing the guide elements 20 along the bevels 24 from the guide groove 15 in the direction of the crank-connecting rod mechanism 28.
